Hearty food is good for the soul in the colder months, but sometimes, I just want something that’s healthy, quick, & easy to put together. Following on from my trip to Edinburgh last year, I was really excited to be commissioned to create a couple of recipes for The Scotch Kitchen blog, so for starters, I came up with this sweet, sharp winter beef salad with fig & pomegranate dressing…
I found a fantastic local butcher supplying only the best Scotch Beef, & the steak for this winter beef salad was cut especially right in front of me. You can’t ask for fresher or better than that, really, can you?
I went for four fillet steaks
just in case I cocked up so I could practice my recipe(!) Fortunately, I nailed it first time, which meant I could also treat my Dad to straight up steak & chips after he spent a day helping me round the house – a well deserved treat!
I pretty much devoured my winter beef salad as soon as I finished shooting it – the fig balsamic & sweet pops of pomegranate work really well with the delicious scotch beef fillet, and it’s definitely going to be a new go to favourite, as it really so quick & simple to make. The dressing is especially good soaked up by slices of fresh sourdough or warm crusty loaf (make abit extra just for that!)
Random fact…peach is pretty good with beef too, particularly Bresaola if you fancied an alternative – do you have any favourite food pairings?
